RICH MEALS

African meals include all the components of a balanced diet, notably :

- proteins  :

•    from animals  : meat, fresh, smoked or dried fish and shellfish.
•  from vegetables : various beans and peas, peanut etc ;

- foodstuffs ensuring basic energy needs among which :

- some containing a lot of starch such as :

•  tubers : kassava, yam, sweet potato
•  bananas : banana-plantains, bananas,
•  cereals : corn, rice, millet ;

- others with fat also including vitamins A and D such as palm oil, peanut oil, in addition to coconut and cotton oil, all of them derived from vegetables.

MEALS INCLUDING NATURAL PRODUCE

The foodstuffs used in African cooking mostly come from traditional agriculture.

MEALS WITH SEVERAL FLAVOURS AND SCENTS

In African cooking, condiments and spices are often used : tamarind, saffron, pepper, ginger, curry etc.

A COOKING WITH SEVERAL COOKING METHODS

Several cooking methods are used in African cooking : foodstuffs are fried, boiled, stewed, cooked in hot ashes, grilled etc.

EASY TO COOK MEALS ?

Foreigners do not deal with African cooking easily.

•  African cooking is said to take a long time to prepare : it is partially true. Indeed, if some dishes require a long preparation, others do not require more time than some standard western dishes.

African cooking is said to be too spicy : the inclusion of spices is made to taste, even in Africa where some people do not eat pepper at all.

« Authentic » or « adapted » ? The choice is debatable but in order to make available recipes for all and get round with the supply problems (difficulty to find some foodstuffs and ingredients), we chose to include both in the kits proposed in the website to avoid excluding some people. Thus, in these kits, the dishes included in the menus are classified into three main categories :

•  recipes coded « Discover »  : for people who never ate an African meal,

• recipes coded « Already experienced »  : for people who already tasted African meals,

pending the inclusion of a third category of recipes coded « Experts » : for those who know African cooking very well.
