NECESSARY INGREDIENTS



PREPARATION


  • 1.5 kg (3.30 lb) sweet potatoes

  • 0.5  litre of oil for frying

  • 1 pinch of salt  (optional)

 


.  Wash, then peal and cut the sweet potatoes into pieces, then into not too thick slices (*) while the oil for frying is heating.

. Immediately throw the cut patatoes in hot oil and turn both sides until browned.

. Remove them from fire when they are done and let them drip. Put some salt if you want and serve immediately.





TIPS





(*) Cutting the sweet patatoes not too thin (less than 0.5 cm) (0.20 inches) enables to obtain at the same time soft and crispy fried patatoes. When they are cut too thin, they become sweet potato chips.

NB. Fried sweet potatoes are to be eaten hot, so don’t start frying the potatoes too early (30 to 40 minutes before starting eating is OK or keep them in a hot oven).
